If you’ve been to the Mountlake Terrace Farmer’s Market, the Red Onion or Roger’s Market Place in the last couple months you’ve probably heard of Happy Cakes. Happy Cakes started less than 5 months ago but is expanding quickly.
Happy Cakes is Summer Meyn and Enriqueta Marshall, two Mountlake Terrace women who have been baking for years. Enriqueta Marshall has been decorating cakes for 20 years and has managed bakeries for Safeway and Central Market. Baking is something Summer Meyn has always done. She was a retail manager for 8 years and wasn’t happy with her job anymore. The two of them had been toying around with the idea of starting their own business for a while and decided to finally take the plunge.
Marshall and Summer both have kids that go to Terrace Park elementary and other moms starting hearing about the cake business and starting sending orders.
In Febuary they started out selling their Tres Leches cake in Mexican Restuarants and stores. In March they expanded by supplying a variety of cakes in Rogers Market Place. In April they started selling at the Fremont Farmer’s Market and in May they started selling at the Mountlake Terrace Farmer’s Market as well as selling cake at the Red Onion.
Next week Happy Cakes is expanding once again. Starting Tuesday July 6th, Happy Cakes will be serving breakfast items at the Red Onion from 7am to 11am Tuesday through Saturday. Sean and LaRae Richards (owners of the Red Onion) have been big fans of Happy Cakes and the cakes have been selling well in the restaurant for the past few weeks. The Red Onion doesn’t open until 11am for lunch so the Richards thought it may be a good use of the restaurant in the mornings. They have all agreed to try this out for a few months and see how it goes.
The Happy Cakes breakfast menu will start out with muffins, doughnuts (from Countryside Doughnuts), bagels, croissants, banana bread, coffeecakes and an egg croissant sandwich. You’ll also be able to get coffee (drip) and chocolate milk. If you want some espresso you can simply walk across the street to Espresso Break and grab a cup in the drive-thru.
Stop by Tuesday though Saturday from 7am-11am. The restaurants is located at 23209 56th Avenue West.

It would be cool if there’s some way for Happy Cakes to sell breakfast items at the Park and Ride in MLT. Instant audience right there.
That’s an interesting idea. I don’t know if it is still there but there was something like this at the Lynnwood transit center that sold coffee and some food.
